Ingredients

  • 20-25 very ripe tomatoes on the vine (approx. 2 trusses)
  • 2 tablespoons virgin olive oil
  • 10 basil leaves
  • 1 teaspoon fresh thyme
  • 3-4 cloves of garlic, sliced

Instructions

  1. Grease an oven dish with some virgin olive oil and place the tomatoes, stem and all, in it.
  2. Divide the basil, thyme, garlic, salt and pepper over the dish.
  3. Place the dish in the oven at 220°C for about 15-20 minutes.
