- Clean the Oishitom tomatoes and slice in quarters
- Clean the vegtables and slice in small parts
- Make the vegetable stock
- Heath the olive oil in the large soup pan. Fry the onion and the garlic. Add the vegetables, stir and fry and then add the vegetable stock. After this add the Oishitom tomatoes.
- In order to be able to take the herbs out of the soup easily ty a string around them and make a bundle and add to the vegetable stock.
- Let it cook for a while and leave to simmer for 60 minutes. Stir regularly. Take out the herb bundle and puree with a hand blender. Add salt and pepper to taste.
TIP: serve with some fresh basil leaves on top and a drop of olive oil and balsamico oil to taste
