OishiiTom tomato jam

Jam is not the first thing you think of when using tomatoes but when using OisiiTom tomatoes and this recepe you will appreciate how tastefull the combination is.

Ingredients

1 kg Oishiitom tomatoes
1 tablespoon fresh grated ginger
1 clove of garlic
150 gr brown caster sugar
50 ml lemon juice
1 tablespoon salt
½ teaspoon grinded cumin
½ teaspoon grinded coriander
½ teaspoon chilli flakes

Instructions

Rinse the OishiiTom tomatoes and slice them in pieces.
Put the tomato pieces in a large pan and cook them for a couple of minutes together with the ginger and garlic.
Add the other ingredients and cook together.
Add water if needed if too dry.
Bring everything to the boil and reduce the heat.
Now let the jam simmer for about 1 to 1 ½ hours. Stir regularly so the mix does not stick.
Taste the jam: possibly add a little pepper or lemonjuice.
The jam is ready when it is thick and glossy.
Scoop the jam in clean, dry jars and turn upside down on the lid.
Let it cool down.
